Hey Sam, I'm a Member of Technical Staff at Profound. I don't personally work much with AEI but can help here! If you go to Answer Engine Insights there is a small settings icon on the right hand side, inline with the tabs "Visibility", "Sentiment", "FactCheck" ... This could certainly be easier to find This is where you can configure competitors. You can:

Configure competitor citations
Configure Name Matching of competitors
Add specific Competitors under "Tracked Competitors"
Whitelist/Blacklist competitors from your analysis/reporting
